The original concept of a delicatessen was a neighborhood establishment whose purpose was to provide good quality products for the community. The first “delis” initially began selling meats and cheeses, and evolved into selling complete meals for the workers who had little time between shifts during a long day’s work. Delis evolved over time to be that go to restaurant providing local comfort food in new and creative ways and becoming a beacon for home grown sandwiches that have become synonymous with different regions across the country.
Scratch cooking is the notion of taking raw, quality ingredients and making them into a creative wholesome meal. Before the mass production of pre-packaged meals, all cooking was done in this way. People everywhere used the ingredients that were readily available and made them into something that they could call their own. If we think back to our grandmothers cooking, in some way we can all relate to the time and care that goes into scratch cooking, and the lost art of making something out of nothing. In today’s day and age of mass production and preservatives, the return to nutritious “Scratch Cooking” is necessary now more than ever.
Our vision for Scratch Sandwich Company was to create a local “deli” using “a made from scratch” style of cooking in which everything that goes into our food is made by our team members. The menu pays homage to the innovators of deli cuisine while also introducing Scratch’s own take on what a sandwich should be, a sandwich that our community can possibly call their own. The usage of high quality ingredients and the emphasis on cooking the majority of our food in house is what defines our restaurant and distinguishes our cuisine from the rest. All in all, our goal is to ensure that everyone who visits Scratch Sandwich Company feels satisfied and welcome and part of the Scratch family.
